Ingredients

3/4cupwhite sugar
1/2teaspoonbaking soda
1/2teaspoonsalt
1 1/2teaspoonsground cinnamon
1/2teaspoonground nutmeg
1/2cupfull-fat sour cream
1/4cupvegetable oil
1egg
1teaspoonvanilla extract
1cupall-purpose flour
Glaze
1/2cuppowdered sugar
1tablespooncream or milk
1/2teaspoonvanilla extract

Preheat oven to 350°F. Spray mini muffin pan with nonstick cooking spray or lightly grease with oil and set aside.
In a large bowl mix together the sugar, baking soda, salt, cinnamon, and nutmeg.
Add the sour cream and mix well.
Beat in the oil, egg, and vanilla extract.
Add the flour and gently mix until fully incorporated. Do not overmix.
Scoop the batter into the mini muffin pan filling the cups about three-quarters of the way.
Bake for 10 – 11 minutes until toothpick inserted comes out clean.
Cool in pan 5 minutes then remove to cool until just warm.
Glaze
In a small bowl mix together the powdered sugar, cream/milk, and vanilla extract until completely smooth.
Dip the tops of the muffins into the glaze or spoon it over the tops instead. Enjoy!
