Ingredients
Banana Bread Muffins
2overripe bananas, mashed
2/3cupgranulated sugar
1teaspooncinnamon
1/2teaspoonsalt
1egg
1/3cupvegetable oil
1/2cupmilk
2teaspoonsvanilla extract
1 1/2cupsall-purpose flour
2teaspoonsbaking powder
Cinnamon Sugar Topping
1/4cupgranulated sugar
1teaspooncinnamon
3tablespoonsunsalted butter, melted
Instructions
Preheat oven to 400°F.
Line muffin pan with muffin liners and set aside.
In a large bowl combine mashed bananas, sugar, cinnamon, and salt.
Beat in the egg and oil.
Stir in the milk and vanilla extract.
Add the flour and baking powder and gently mix until combined. Do not overmix.
Scoop batter into the muffin pan distributing it evenly between the muffin cups.
Bake for 18 - 22 minutes until golden brown and a toothpick inserted in the center comes out clean or with a few crumbs. There should be no wet batter!
While the muffins are baking combine the sugar and cinnamon in a small bowl and place the melted butter in a separate small bowl.
Once the muffins are finished baking, allow them to cool in the pan for 5 minutes.
While still warm, dip the muffin tops into the butter then into the cinnamon sugar.
