Ingredients
3/4cupunsweetened applesauce
2tablespoonscoconut sugar or brown sugar
1teaspoonground cinnamon
1/2teaspoonsalt
2tablespoonshoney or maple syrupReminder: No honey for babies under 1 year old
1/4cupvegetable oil or melted coconut oil
1egg
1teaspoonvanilla extract
3/4cupwhole wheat flour
1/2teaspoonbaking soda
Instructions
Preheat oven to 350°F. Line mini muffin pan with mini muffins liners, spray with nonstick cooking spray, or lightly grease with oil and set aside.
In a large bowl combine the applesauce, brown sugar, cinnamon, and salt (mixture should be completely smooth). Stir in the honey/maple syrup.
Beat in the oil, egg, and vanilla extract.
Add the flour and baking soda and mix until fully incorporated. Do not over mix.
Scoop the batter into the mini muffin pan filling the cups almost to the top.
