2overripe bananas, mashed
1/2cupunsweetened applesauce, room temperature
1/2cupcoconut sugar or brown sugar, packed
1teaspoonground cinnamon
1/2teaspoonsalt
2eggs, room temperature
1teaspoonvanilla extract
1 1/2cupswhole wheat flour
1teaspoonbaking soda
1/2teaspoonbaking powder
Instructions
Preheat oven to 375°F. Line muffin pan with muffin liners and set aside.
In a large bowl combine bananas, applesauce, sugar, cinnamon, and salt.
Beat in eggs and vanilla extract.
Add flour, baking soda, baking powder and gently fold until combined.
Scoop batter into the muffin pan filling the cups 3/4 full.
