Ingredients

2/3cupbrown sugar, packed
1teaspoonbaking powder
1/2teaspoonbaking soda
3/4teaspoonsalt
1tablespoonground ginger
2teaspoonsground cinnamon
1/2teaspoonground nutmeg
1/2cupsour cream
1/3cupmolasses
2eggs
1/2cupvegetable oil
1/2cupmilk
2teaspoonsvanilla extract
1 3/4cupsall-purpose flour
Glaze
1tablespoonbutter, softened
2teaspoonsmilk or cream
1/2teaspoonvanilla extract
1/3cuppowdered sugar
Instructions
Gingerbread Loaf
Preheat oven to 350°F.
Spray a 9x5 inch loaf pan with nonstick cooking spray, or grease with oil, or line with parchment paper, and set aside.
In a large bowl mix together the brown sugar, baking powder, baking soda, salt, and spices until evenly combined.
Add the sour cream and molasses and mix well.
Beat in the eggs and oil.
Stir in the milk and vanilla extract.
Add the flour and gently mix until fully incorporated. Do not overmix.
Pour batter into the baking pan in an even layer.
Bake for 44 – 46 minutes until toothpick inserted in the center comes out clean or with a few dry crumbs.
Cool in pan 10 minutes then remove to cool completely.
Glaze
In a small bowl combine the butter, milk/cream, and vanilla extract.
Add the powdered sugar and mix well until smooth and creamy.
