Homemade gingerbread loaf from scratch made with sour cream, brown sugar, molasses, and warm spices, and drizzled with a creamy vanilla glaze. It’s perfect for the holidays!

Ingredients
Gingerbread Loaf
  • 2/3 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup sour cream
  • 1/3 cup molasses
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
Glaze
  • 1 tablespoon butter, softened
  • 2 teaspoons milk or cream
  • 1/2 teaspoon vanilla extract
  • 1/3 cup powdered sugar
Instructions
Gingerbread Loaf
  1. Preheat oven to 350°F.
  2. Spray a 9x5 inch loaf pan with nonstick cooking spray, or grease with oil, or line with parchment paper, and set aside.
  3. In a large bowl mix together the brown sugar, baking powder, baking soda, salt, and spices until evenly combined.
  4. Add the sour cream and molasses and mix well.
  5. Beat in the eggs and oil.
  6. Stir in the milk and vanilla extract.
  7. Add the flour and gently mix until fully incorporated. Do not overmix.
  8. Pour batter into the baking pan in an even layer.
  9. Bake for 44 – 46 minutes until toothpick inserted in the center comes out clean or with a few dry crumbs.
  10. Cool in pan 10 minutes then remove to cool completely.
Glaze
  1. In a small bowl combine the butter, milk/cream, and vanilla extract.
  2. Add the powdered sugar and mix well until smooth and creamy.
  3. Drizzle over the fully cooled bread.
