  • 1/2 cup (1 stick) salted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup toffee bits
  1. Preheat oven to 325°F. Line baking sheet with parchment paper or nonstick baking mat. Set aside.
  2. In a large bowl cream together butter, both sugars, and salt until fluffy. Beat in the egg and vanilla extract.
  3. Add flour and baking soda and mix until dough is formed. Fold in the toffee bits.
  4. Form 2-tablespoon sized balls of dough and place onto the baking sheet spaced evenly apart (8 per sheet).

  5. Bake for 9 - 10 minutes until light brown and the edges are set. Do not over bake!
  6. Cool on baking sheet for 10 minutes then remove to cool completely or enjoy while warm.
  7. Store cookies in an airtight container or resealable plastic bag after they are fully cooled to prevent them from hardening or drying out.
