  • 1 cup unsweetened applesauce
  • 2/3 cup coconut sugar or brown sugar, packed
  • 1/2 tablespoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup nondairy milk
  • 1/4 cup vegetable oil
  • 1 1/2 cups quick oats
  • 1 1/4 cups whole wheat flour
  • 1 teaspoon baking soda
  1. Preheat oven to 400°F. Line muffin pan with muffin liners and set aside.
  2. In a large bowl mix together applesauce, sugar, cinnamon, nutmeg, and salt until smooth.
  3. Beat in the eggs and vanilla extract then stir in the milk and oil.
  4. In another large bowl whisk together the oats, four, and baking soda.
  5. Add the dry ingredients to the wet ingredients and mix well until fully incorporated.
  6. Scoop the batter into the muffin pan filling the cups to the top.
  7. Bake for 15 – 16 minutes until toothpick inserted comes out clean or mostly clean.
  8. Cool in pan 5 minutes then remove to cool completely.
