Foolproof Chocolate Chip Banana Muffin Recipe

This recipe was adapted from one of my best banana muffin recipes. Readers love it because it’s so easy to make and it’s very hard to mess up. All I did was remove the spice and add chocolate chips and reduce the baking temperature just a little.

It never lets me down. It’s pretty much perfect every time I make it and I’ve made it so many times over the years that I’ve got it memorized. I even use it as a base recipe for other banana muffin variations.

It’s a one bowl banana muffin recipe that requires no mixer, takes only 10 minutes prep, and you can’t mess this up because it’s a foolproof recipe!

Banana Muffins with 3 Bananas

These muffins are completely dairy-free (no butter and no milk). However, they are made with oil and 3 bananas so they’re still moist and delicious, and they have tons of flavor.

They have crispy tops, they’re perfectly sweetened, soft and fluffy on the inside, and they have just the right amount of chocolate chips.




One thing I’ve learned since I started baking is that the simplest recipes are always the best and the ingredients for this recipe are really simple. I’m sure you have most, if not all of them, already on hand.

All you need are bananas, sugar, salt, oil, eggs, vanilla extract, all-purpose flour, baking soda, and chocolate chips.

I always bake with bananas that are overripe. I will literally set them aside and wait for them to brown because those are the best bananas to bake with.

The baking soda and the baking temperature yields bakery style muffins so you if you love the ones from the cafe you’ll love these. They are awesome.

I must say I prefer to have choc chip banana muffins for dessert rather than breakfast. I think it’s the chocolate. It just makes everything so sinful.

Ingredients
  • 3 overripe bananas, mashed
  • 3/4 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 cup semisweet chocolate chips
Instructions
  1. Preheat oven to 350°F. Line muffin pan with muffin liners or spray with nonstick cooking spray and set aside.

  2. In a large bowl combine bananas, sugar, baking soda, and salt.

  3. Beat in oil, eggs, and vanilla extract.
  4. Add the flour and gently mix until combined. Do not overmix.

  5. Fold in the chocolate chips.

  6. Scoop batter into the muffin pan distributing it evenly between the cups.

  7. Bake for 18 - 20 minutes until toothpick inserted comes out clean or with a few crumbs.

  8. Cool in pan 10 minutes then remove.
